Ah, how lovely it can be when you create something so beautiful and tasty without much fuss & mess!
Two days ago, I was having a hectic day, when my hubby asked me to make some French toast. On the other hand, I’ve promised my boys that I’ll make something sweet for them.
If you’ve been following me for a while, you might know that I’m a big advocate of no preservatives, no added sugar, and trying to make natural & healthy snacks whenever possible.
Therefore, the situation called for some of my (now already famous – thanks Catherine) kitchen resourcefulness.
Here’s the result: French toast with Greek yogurt & mixed berries!

It’s quite amazing how well the process went, and how both my boys and my hubby were pleased with the dish. They ate everything without hesitation!
I’ve had to invite Catherine over tomorrow to help me with photos (she’s doing a FANTASTIC job with these, wouldn’t you tell?) so we can share this incredibly simple yet good-looking dessert with you guys.
And I’m not exaggerating when saying “Super-Simple”.
Preparing The French Toast
Here’s how the process goes:
- You prepare french toast like you normally would
- Pour some fresh Greek Yogurt over
- Put berry mix on top (that’s what I had in the fridge at the time)
Told you it was super-simple.
Here’s what you need
- Two teaspoons of ground cinnamon
- Four tablespoons of sugar
- A half of teaspoon of ground nutmeg
- Four tablespoons butter
- One teaspoon of vanilla extract
- A half a cup of milk
- Eight eggs
- 1/2 cup of maple syrup, warmed
- A dozen of bread slices
- A glass of Greek Yogurt
- Berries mixture of your choice
French Toast Preparation Instructions
- Combine sugar with cinnamon & nutmeg in a small bowl
- Add eggs and start mixing on low (if you don’t have a mixer check out my recommendations for hand mixers)
- While mixing, add milk and vanilla
- Mix until the liquid is consistent, and pour into a plate wide enough to house a single bread slice
- Melt a bit of butter on a skillet
- While the butter is melting, dip one slice of bread in the egg mixture and turn to the second (dry) side
- When the butter is melted, put the dipped bread in and fry until golden brown on both sides
Finalizing the dish

When the frying process is complete, the only thing left to do is set the toast on a nice plate, pour yogurt over it and decorate with as much berries as you’d like.

Fun Trivia From That Evening (which will be helpful for you)
The toast Cathy photographed with me the second day was a bit different than the original ones my boys ate the day before.
The second day recipe included less ingredients and more eggs for a better color combination. The eggs actually enrich the taste of the bread if you ask me.
Furthermore, the bread slices we used on a shoot were from a regular loaf I baked that day – not the actual toast! And the result was even better, but my boys weren’t at home when Cathy & myself made & photographed it.
And of course, enjoyed tasting.
That’s the beauty of being resourceful in the kitchen – you work with what you have!
